about your carcass

  • Please ensure that your carcass is clean on the farm. One contaminated carcass can spoil the rest of what is being loaded with it.
  • Try to keep the carcass as whole as possible for different reasons. A cut-up carcass takes more hanging space in my cold room and requires more labor. I will be forced to charge extra for labor if a carcass is cut into small pieces! Yes, I do understand that big game like an eland or big kudu is difficult to handle, so please just have it cut into quarters, not ten pieces. Your fillet, loin, rump, etc., will be compromised.

    Please don't remove the sirloins, fillets, etc. I can't hang it in my cold room if they are removed!
  • As my valued customer, you expect top-quality products from me, but I can't perform miracles to give you something that I did not receive in that condition! Wildshoekie's recipes are tested, and our service ranks top in South Africa. We will always provide the best service and product to the best of our ability.

general information

  • Processed meat must be picked up within 24 hours after receiving notice that processing is completed. A storage fee of R10 per kg will be payable if not collected within 48 hours without prior arrangement.

    A 5% discount will be given for payments made in cash; a card facility is available, or you can do an EFT and just bring the proof of payment along. Each carcass will be weighed upon receipt, and we can also weigh it out for you again. I do not hold meat back and only give you the weight that I received. Depending on the processing—for instance, if you make biltong and dry wors—if you hand in a 100 kg carcass, you should receive around 115 to 120 kg back! Don't let yourself be fooled by "cheap" butchers that take your meat by being "cheap."

Processing Cost

Our policy is that we give you back ALL your meat! We do not give you just what you handed in; all the added ingredients make up extra weight, but at Wildshoekie, you receive everything you are paying for!

Please take note: No. 1 and 2 are calculated at the ratio of 45% Biltong and 55% Drywors. The drywors portion can also be split up into patties and normal flavors of boerewors. If this ratio is changed and more wors/drywors/patties are requested, the pricing will change because more ingredients are necessary for that.

  
1. Biltong and Drywors with 30% Karan Beef Brisket fat - R34.50 per kg of weighed-in carcass;  
2. Biltong and Drywors with 20% Karan Beef Brisket fat - R30.50 per kg of weighed-in carcass;  
3. Basic Processing - R13.80 per kg of carcass handing in weight - This includes deboning, cleaning meat of tendon (sinew), blood meat, etc., mincing of meat, cutting of biltong, steaks, sticks, goulash, etc., but NOT INCLUDING ANY INGREDIENTS. If, for instance, some wors must be made, you only pay extra for the ingredients we add and packaging;  
4. Chili, BBQ, Chutney, and Black Pepper sticks can also be made and will be included in no. 1 and 2 to a max of 5 kg. More than 5 kg, R6.00 per kg will be charged for extra labor;  
5. Drying of Biltong, drywors, and sticks can be done - R16.00 per kg wet weight. Please take note, booking for drying must be done in advance! I have limited space;  
6. Marinating of steaks - R90.00 per liter of marinade used. I have a big range of marinade available and can ensure the quality of the product; it is not these cheap marinades you buy on the shelves;  
7. Crumbed Schnitzel - R45.00 per pack of 4, Cordon Bleu stuffed with cheese and ham and crumbed - R83.00 per pack of 4;  
8. Rib Rolls and deboned legs can also be made - Average price on normal size impala and blesbok leg and rib rolls blue wildebeest - R95.00 each. Stuffed with pork spek, green pepper, onion, and pineapple;  
9. Burger patties can also be made. Normal Chargrill gets fried onions and green pepper in - R39.00 pkg, Black pepper and cheese, Jalapeno with or without cheese - only pay extra for the pepper, cheese, and Jalapeno;  
10. If processing no. 3 is chosen - Normal flavors Boerewors and drywors ingredients is R38.00 pkg. This includes flavors such as MSG Free, Red wine and garlic, Worcestershire sauce, Curry sosatie, Traditional, Salt and Pepper. Flavors such as Pepper and cheese, Chili Cherry with or without cheese, Chutney and Fruit chutney with peach and pineapple, Chakalaka, Jalapeno with or without cheese, Jalapeno Prego, Spinach and Feta, Peppadew and feta OR cheese, these ingredients will be payable extra on top of the R38.00 pkg;  
11. Stuffed Fillets - jalapeno and cheese, peppadew and feta or cheese, pineapple and cheese, wrapped in either bacon or sheep net-fat - carcass under 60 kg - R115 per pack of 2; Carcass under 130 kg - R115.00 per fillet; Carcass above 130 - R160.00 per fillet. This is an average, but I do use discretion in determining the price on these items;  
12. Steaks wrapped with net-fat, spiced - R60.00 per pack of 2, stuffed and wrapped - R95.00 per pack of 2;  
13. Sosaties (Kebabs) with pork spek or brisket, onion, and green pepper between meat blocks - R45.00 per pack of 4, marinated in our homemade sweet curry sauce;  
14. Smoked Salami - R52.00 pkg;  
15. Steamed and smoked cabanossi and Russian - R45.00 pkg. Cheese, cherries, or Jalapeno can be added at additional cost;  
16. Kaasgriller/Cheesegriller - smoked - R57.00 pkg. Top quality cheese is used, not processed cheese;  
17. Carpaccio and bacon, brined (pickled), and smoked - R36.00 per kg;  
18. Oepsies and pork sisters - R55.00 per pack of 4;  
19. Skilpadjies or Pofadder wors - R43.00 pkg.  
20. Homemade Venison Pie from your carcass - R68.00 per +- 1 kg pie in foil already cooked with mixed vegetables, just bake for 40 min for the dough to be cooked;  
21. Meatballs with added onion and green pepper, in our homemade curry sosatie sauce - R45.00 pkg in foil container, just bake until cooked;  
22. Packaging of your processed meat is very important to us. We take pride in our packaging! Every single vacuum pack is marked with labels stating the species of animal and what cut is inside it; if marinated, what marinade was used. Vacuum packing is R3.50 per pack, foam plus vacuum is R4.20 per pack.  
23. Packaging of biltong, drywors, and sticks is done first in a brown paper bag, then labeled with what species it is as well as what is inside, and then put in a vacuum bag and vacuum packed - R5.50 per pack;  
24. Biltong, drywors, and sticks can be dried at a cost of R16.00 per kg wet weight.

Saturdays, we are at the Boeremark in Silverton, from 05h00 to 09h30. After that, we are closed and will only be available for receiving game with prior arrangement!  
Sunday 10h00 - 17h00 during hunting season. The rest of the year, we are closed on Sundays.

About us

Wildshoekie Vleismark was established in 2005 in a small butchery in Pretoria North. I acquired the butchery in January 2010, and it experienced such significant growth that I had to relocate to Centurion, renting a factory in Hennopspark in 2015. In September 2017, I purchased the premises where we are currently located in Derdepoort Kameeldrif East, revamped the outbuilding into a factory, and moved in at the end of October 2017.

Growing up on a farm, I learned the value of hunting and using our own meat for household meals. We didn’t just make Biltong and Drywors from venison! This background drove me to recognize the need to educate consumers about the true value of their hunt when I acquired Wildshoekie. Consequently, I introduced my recipes and flavors to my clients. Today, I am proud to say that over 90% of my clients use their meat as table meat in their households.

In 2011, we also began participating in the Boeremark in Silverton, starting with just one table and a few products. I am pleased to say that Wildshoekie Vleismark has become the stall with the widest range of meat products at the Boeremark, offering Chicken, Lamb, Mutton, Pork, Beef, and, of course, being a leader in Venison!
